Warm Quinoa Salad Recipe

Quinoa (pronounced KEEN-wah) is on my super-food list for a reason. It has a slightly nutty flavor and cooks faster than rice – in about 15 minutes. It’s such a versatile ingredient. It’s good as a hot cereal or ground into flour as it adds moisture to baked goods.

Ingredients
  1. 4 cups water
  2. 2 teaspoons kosher salt
  3. 2 cups quinoa
  4. 1/2 medium English cucumber, halved lengthwise, small dice (about 1 1/4 cups)
  5. 1/2 medium red bell pepper, small dice (about 2/3 cup)
  6. 1/2 medium yellow bell pepper, small dice (about 2/3 cup)
  7. 1 teaspoon white wine vinegar
  8. 1 tablespoon olive oil
Instructions
  1. Combine water and salt in a large pot and bring to a boil over high heat.
  2. Rinse the quinoa. Add the quinoa to the pot and stir briefly. When it returns to a boil, reduce the heat to low and simmer gently until quinoa absorbs the liquid and grains are tender, about 10 to 15 minutes.
  3. When quinoa is ready, stir in remaining ingredients until well combined. Taste, adjust seasoning, as needed, then serve.
