The end result is a buttery, creamy, cheesy blend of cauliflower that makes it seem like you’re just having an ordinary side dish and aren’t going without anything.

  1. 1 head of cauliflower
  2. 2 Tablespoon of heavy cream
  3. 1 tablespoon butter
  4. 2 ounces sharp cheese
  5. Salt and pepper to taste
  1. Wash and trim cauliflower into medium sized chunks.
  2. Pour cauliflower, 2 tablespoons heavy cream and 1 tablespoon butter into a microwave safe bowl with a cover and microwave, six minutes on high.
  3. Mix the cream and butter to coat the cauliflower. Return to microwave and cook for 6 more minutes on high.
  4. Place hot mixture into a blender or food processor. Add cheese. Pulverize until consistency is smooth. Season with pepper and salt.
  5. Adjust cream and butter to your creaminess preference

The good news is that the longer the mashed cauliflower sits, the more flavor it has. If you’d like to save a little time on Thanksgiving, make the mashed cauliflower the day before, store in an airtight container in the refrigerator, and heat in the oven or on the stove top the following day.
